Pyrex: Celebrating 100 Years Of Awesomeness #PYREX100

Old Fashioned Hot Milk Cake

When I think of my mom, the most vivid memories are in the kitchen.  I remember that she used to make lavish Sunday dinners and loved to bake. Her mixer always seemed to be whirring and the house always smelled wonderfully.  I fondly remember helping her to measure the ingredients using her Pyrex measuring cups.

Sadly, her love of cooking hasn’t rubbed off on me.  I do love to bake though.  She used to have this cookbook that featured really great cake recipes.  In that book, there was a recipe for “hot milk cake.”  Mom helped me make it the first time, and after that it became my staple recipe.  After years and years of using that cookbook, sadly it became worn and some of the pages ripped. Many of the recipes we loved were lost. 

A few weeks ago, mom called and mentioned that she would be visiting on Memorial Day weekend.  I don’t know why, but for some reason, I somehow remembered the hot milk cake I used to make. I decided that I would make one that weekend.  My dilemma though, was that I no longer remembered the recipe.  I scoured the web and found this recipe that sounded similar to my favorite hot milk cake recipe.  It was a hit! Here is the recipe I found:

Old Fashioned Hot Milk Cake

Serves: 12


  • 1 stick butter
  • 1 cup milk
  • 2 tsp. vanilla extract
  • 4 eggs, at room temperature
  • 2 cups sugar
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. salt



  1. Preheat the oven to 325°F. Adjust an oven rack to the middle position. Grease and flour a tube pan or Bundt cake pan.
  2. In a small saucepan over low heat, melt the butter. Stir in milk and vanilla and continue to heat until small bubbles form around the outside of the pan and the mixture is very hot but not boiling. Reduce heat to low.
  3. In an electric mixer fitted with the whisk attachment, combine eggs and sugar on medium-high speed for 5 minutes.
  4. Meanwhile, in a medium bowl, sift together flour, baking powder, and salt.
  5. Once the egg and sugar mixture has tripled in volume, slowly add the hot milk mixture, mixing on low speed until incorporated.
  6. Add the dry ingredients in two batches, mixing after each addition until just incorporated. Pour the batter into the prepared pan and bake for one hour, checking 5 minutes prior to baking end time. A toothpick inserted into the middle of the cake should come out clean, with a few crumbs attached, but do not over-bake.
  7. Cool in the pan for 10 minutes before inverting onto a cooling rack or serving plate to cool completely.
