Quesadillas for Cinco De Mayo

Easy Quesadillas RecipeAs you are all aware, Cinco de Mayo was celebrated last Saturday.  While we didn’t have a Cinco de Mayo party or anything, we did celebrate by having a Mexican themed meal.  Before we get to the meal, let’s talk a little about Cinco de Mayo.

What is Cinco de Mayo?

Cinco de Mayo is the anniversary of the Battle of Puebla which took place on May 5, 1862.  Mexico emerged as being victorious in the their fight against French forces.  On this day, people with a Mexican background, who live in the United States, celebrate their culture, achievements and experiences.

So on Cinco de Mayo, I decided to whip up some Quesadillas.  I had seen a recipe on my friend Becky’s site a few days before, and was craving them, so I had to make them.

When I told Z.E.N. that we would be having quesadillas, he got super excited.  He was introduced to them a few years ago when we visited Mexico and he loved them.  He couldn’t wait.

They are super easy to make and taste great!

Easy Quesadillas Recipe

Servings: 4


  • 4 Soft flour tortilla shells – I used the medium sized tortillas
  • 2 cups shredded cooked chicken – I had previously roasted some chicken breast so I just shredded that. ( you can also use turkey, beef or the meat of your choice)
  • 1-medium size white onion, diced
  • 6 oz. shredded cheese – I used a Mexican blend which included Queso Quesadilla, Asadero, Queso Gallego, Manchego and Anejo Enchilado cheese, but you can use your favorite cheese.
  • 1 1/2 teaspoon sugar
  • oil – I used olive oil, but you can use your favorite oil. (You can also use butter or margarine)
  • Sour cream, salsa or guacamole (for dipping) – I used the HERDEZ® Salsa Casera medium salsa

In a skillet over medium heat, sauté the onions, sugar and shredded chicken until onions are golden.

Spread cheese and chicken/onion mixture on half of tortilla. Fold each tortilla in half.

Heat lightly oiled pan and cook quesadillas over medium heat for 2-3 minutes on each side or until cheese is melted.

Transfer with a spatula to cutting board and cut in wedges.

Serve immediately with sour cream, salsa or guacamole.  We used all three.

The Quesadillas were quite tasty.  Both Phil and Z.E.N. loved them!
