Spicy Fish and Sweet Potato Chowder

  • 2 – 3 Fish Fillets, any whitefish you prefer, (seasoned with salt and pepper)
  • 8 C Fish Stock
  • ½ Onion, large, chopped
  • 1 tsp Garlic, minced
  • 1 tsp each Salt and Pepper
  • 1 tsp Dill, dried
  • 1 tsp Thyme, dried
  • ¼ C Flour
  • ¼ C Butter, Bacon fat or Oil – Use your preference
  • ½ C Heavy Whipping Cream
  • 1 ½ C Milk
  • 3 stalks Celery, chopped
  • 3 Carrots, chopped bitesize
  • 3 Sweet potatoes, medium, peeled and chopped
  • 1C Yellow beans, chopped bite size
  • 7 oz can Niblet Corn
  • 1 Tbsp. Hot Scotch Bonnet Sauce (can use any hot sauce you prefer, or even simmer the soup
  • with a whole scotch bonnet pepper
  • ½ tsp Liquid Smoke (optional)
  • 3 rashers Bacon, cooked and chopped (the photo looks like 6, but they are full rashers cut in ½)

  1. Begin by sautéing the onions and celery together until soft. Add the garlic, salt and pepper. Add carrots, potatoes, and herbs, and sauté for approximately 5 minutes.
  2. In a soup pot, melt your butter (or any fat your using), and then add your flour.
  3. Stir the flour and fat together to form a roux and cook it a few minutes to brown it slightly and lose the “flour” taste.
  4. Carefully, add the stock, and the potato/carrot mixture to the roux. Stir well and bring to a simmer.
  5. When the potatoes and carrots are almost cooked through, add the cream, milk, fish fillets, beans, liquid smoke and hot sauce. The filets will break up in the soup, so no need to cut them beforehand.
  6. Simmer for another 10 – 15 minutes or so.
  7. Upon serving, sprinkle a bit of chopped bacon on top of the soup in every bowl.
  8. Garnish with crusty bread!
  9. Enjoy!
