Sausage and Egg Muffin Cups

There are many easy holiday breakfast ideas that can come to fruition by utilizing Johnsonville® Sausage products. For instance, something as simple as eggs with Johnsonville® Sausage can be delicious, especially if served with special holiday indulgences like fruit scones. Another family favorite is sausage and egg muffins, which can be made by combining eggs, sausage, cheese, and any other desired toppings on an English muffin or croissant. If you're looking for more elaborate breakfast ideas, you can make a hearty sausage quiche, utilizing pie crust from the grocery store for added convenience. All you have to do is combine 4 eggs, 1 c. milk or cream, 1 c. diced sausage, 1 c. cheese, 1 c. peppers and onions (if desired), and seasonings of your choice, pour them into the pie crust, and let it bake at 350 degrees Fahrenheit for 45 minutes to one hour while you enjoy time with your family.

I like to keep it simple (and easy) and like to make eggs in a muffin tin. It saves time since I can prep them all at once and feed a crowd easily and quickly.

Sausage and Egg Muffin Cup Recipe

Ingredients:
6 oz Johnsonville® Vermont Maple Syrup Breakfast Sausage 
6 large eggs
1/4 cup milk
1/4 cup chopped tomatoes
1/4 cup chopped onions
2-8 oz pkgs crescent rolls
garlic, salt & pepper to taste
grated cheddar cheese

Directions:

Preheat oven to 375 F.

Roll out crescent rolls on a flat cold surface. I have jumbo sized muffin tins so I had to use 2 crescent rolls for each muffin cup. Place dough into muffin tin. Gently press into each cup making sure to seal gaps all the way to the top of the tin.

In a large pan, lightly sauté the tomatoes and onions. Remove from pan and set aside. Remove sausage casings, and brown sausage for about 5 minutes, breaking it up into small pieces as you go. Remove from heat and drain any excess fat.

Whisk together eggs, milk. Season with salt and pepper.

Pour egg mixture into each muffin cup.

Add sausage, tomatoes and onions.

Top with cheese.

Bake for 20-25 minutes.

Note:  (I left a few eggs whole because I prefer them that way)
