The Best Chewy Chocolate Chip Cookies

The Best Chewy Chocolate Chip Cookies My favorite cookies are chocolate chip cookies.  I especially love them when they are crispy on the outside and chewy on the inside.  For that reason, I’m always looking for the that perfect chewy chocolate chip cookie recipe. When I was offered the chance to try Finlandia imported butter, I knew right away that I was going to use it to bake up some cookie goodness.

You’re probably already familiar with the Finlandia name.  They’ve been making cheese for years.   They have recently introduced Finlandia Butter and this premium butter is among the best tasting butter around. 

Finlandia Imported Butter

This versatile butter can be used to enhance the taste of your favorite breakfast foods, to whip up a savory meal or to cook up some sweet desserts.  The sweet, rich taste of this butter is the perfect addition to your croissant, muffin or toast.  It is also a great choice at dinnertime.  Dinner recipe calls for butter?  This butter will add great flavor to your meal. 

The milk used to make this butter is fresh, pure and produced in Finland on family-owned farms. It is the ideal choice for those with a natural palate.  I love the fact that this butter is free of rBST hormones and is manufactured with non-GMO ingredients.  The milk comes from cows that are nourished with non GMO feed and the cows heartily graze throughout the warm season. Because of this, I feel comfortable serving this to my family.

Finlandia butter is perfect for baking decadent delights like chocolate chip cookies. In fact, I whipped up a fresh batch of the best chewy chocolate chip cookies I’ve ever baked today using Finlandia unsalted butter.  Be warned though, If you’re looking for instant gratification, this is not the recipe for you as it calls for chilling your dough overnight.  While doing my research for the best chewy chocolate chip cookies, I learned that letting your cookie dough chill in the refrigerator overnight,  overnight produces better tasting cookies. The Best Chewy Chocolate Chip Cookie Recipe

1 cup (8 oz.) unsalted butter, at room temperature (I used Finlandia unsalted butter)
1 1/2 cups brown sugar
1/2 cup white sugar
2 large eggs, at room temperature
1 1/2 Tbsp. pure vanilla extract
2 3/4 cup all-purpose flour
1 tsp. baking soda
1/2 tsp. salt
2 cups semi-sweet chocolate chips


Line baking sheets with parchment paper or non-stick baking mats.

Beat butter with an electric mixer until creamy. Add the brown and white sugar and beat for 5 minutes on high speed until light and fluffy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla.  Whisk together the dry ingredients. Add the dry ingredients to the creamed mixture in batches, mixing on low speed just until the flour is incorporated. Stir in the chocolate chips using a silicone spatula or the mixer on low speed. Using a small ice cream scoop or tablespoon, drop balls of dough onto prepared baking sheets. I actually formed balls using 2 tablespoons of dough. Press plastic wrap against dough and refrigerate overnight.

When ready to bake, preheat oven to 350 degrees. Bake for 12-14 minutes, Rotate the baking sheet for more even browning.  Let cookies cool on baking sheet for about 10 minutes before transferring them to a cooling rack.

Makes about 3 dozen cookies.
